For the Salad
  • 1 can Garbanzo Beans rinsed and drained
  • 1 can White Beans rinsed and drained
  • 1 cup Diced Turkey Breast can substitute with chicken
  • ½ cup Diced Salami omit for vegetarian option
  • 1 medium Green Bell Pepper chopped
  • 1 cup Cherry Tomatoes halved
  • ½ cup Sliced Pepperoncini or jalapeños for heat
  • ¼ cup Finely Chopped Red Onion can substitute with green onion
  • ¼ cup Chopped Parsley or basil for flavor
  • 1 cup Diced Provolone or Mozzarella or any melty cheese
For the Dressing
  • 1 cup Plain Greek Yogurt can substitute with mayonnaise
  • 2 tablespoons Extra Virgin Olive Oil or avocado oil
  • 2 tablespoons Red Wine Vinegar or white wine vinegar
  • 1 tablespoon Pepperoncini Brine or pickle juice
  • 1 tablespoon Dijon Mustard or yellow mustard
  • 1 clove Garlic minced
  • 1 teaspoon Dried Oregano or Italian seasoning
  • 1 pinch Red Pepper Flakes to taste
  • 1 teaspoon Sea Salt or kosher salt

Method
 

Step-by-Step Instructions
  1. In a small mixing bowl, whisk together Greek yogurt, olive oil, red wine vinegar, pepperoncini brine, Dijon mustard, minced garlic, oregano, red pepper flakes and salt until smooth.
  2. In a large mixing bowl, combine garbanzo beans, white beans, diced turkey, diced salami, chopped bell pepper, halved cherry tomatoes, sliced pepperoncini, red onion, parsley, and provolone or mozzarella. Gently toss until mixed.
  3. Pour the dressing over the salad ingredients and toss to ensure all are coated.
  4. Cover the salad and refrigerate for at least 30 minutes to allow flavors to meld before serving.
