- Preheat your grill to medium-high heat, around 400°F (200°C).
- Rub the chicken breasts with olive oil and coat them with chili powder, smoked paprika, garlic powder, salt, and black pepper. Let marinate.
- Cook the chicken for 6-7 minutes per side until golden with an internal temperature of 165°F (75°C). Let rest for 5 minutes before slicing.
- In a skillet, sauté or grill corn kernels for about 5 minutes until lightly charred.
- Whisk together mayonnaise, sour cream, and lime juice in a bowl until smooth.
- Assemble bowls by dividing rice, adding chicken and corn, crumbling cotija cheese on top, and drizzling with lime crema. Garnish with cilantro.
