  • 1 pound Shrimp Peeled and deveined, wild-caught preferred.
  • ¼ cup Olive Oil Can substitute avocado oil.
  • 2 cloves Garlic Minced.
  • 1 teaspoon Smoked Paprika Or regular paprika and cayenne.
  • 1 teaspoon Chili Powder Adjust based on heat preference.
  • 1 teaspoon Cumin
  • ½ teaspoon Salt Adjust to taste.
  • ½ teaspoon Black Pepper Adjust to taste.
  • 1 juice Lime Fresh for best results.
For the Corn Salsa
  • 1 cup Corn Fresh or frozen.
  • ½ cup Red Bell Pepper Diced.
  • ¼ cup Red Onion Finely chopped.
  • 1 tablespoon Cilantro Chopped, optional.
  • 1 juice Lime
  • Salt to taste
  • Black Pepper to taste

Method
 

Preparation
  1. Whisk together olive oil, minced garlic, smoked paprika, chili powder, cumin, salt, black pepper, and lime juice in a medium bowl.
  2. Add shrimp to the marinade, ensuring each piece is well-coated. Cover and marinate in the refrigerator for at least 15 minutes.
  3. Preheat grill or grill pan to medium-high heat.
  4. Grill shrimp for 2-3 minutes on each side until pink and opaque.
  5. In a separate bowl, combine grilled corn, diced red bell pepper, red onion, cilantro, lime juice, salt, and pepper.
  6. Assemble the bowl with cooked rice, shredded lettuce, grilled shrimp, avocado slices, and corn salsa.
  7. Garnish with lime wedges and extra cilantro.
