Step-by-Step Instructions for Potato Pave
  1. Preheat your oven to 325°F (160°C) and line a loaf pan with parchment paper.
  2. Using a mandoline, slice the Yukon Gold potatoes into 1/16-inch thick rounds.
  3. Start layering the potato slices in the prepared loaf pan, brushing each layer with clarified butter and seasoning.

  5. Cover the top with parchment and tightly seal it with aluminum foil, placing a weight on top.
  6. Bake for 1 hour and 45 minutes to 2 hours until tender.
