  • 8 oz capellini pasta Substitute with angel hair if unavailable.
  • 2 medium lemons Juice of; includes 1 tsp lemon zest.
  • ½ cup diced tomatoes Seeds removed, any ripe tomato variety works well.
  • 3 tbsp capers Drained; can substitute with green olives.
  • 1 tbsp curly leaf parsley Finely chopped; omit or swap for basil if desired.
For the Dressing
  • 3 tbsp extra virgin olive oil Can substitute with any neutral oil.
  • 1 ½ tsp garlic salt Regular salt can be used with added minced garlic.
  • ½ tsp black pepper Adjust to taste.

Method
 

Cooking Instructions
  1. Step 1: Cook Pasta. Bring a large pot of salted water to a boil. Add 8 oz capellini pasta and cook for about 5 minutes, or until al dente. Drain and rinse under cold water.
  2. Step 2: Prepare Dressing. Whisk together the juice of 2 medium lemons, 1 tsp lemon zest, 3 tbsp olive oil, 1 ½ tsp garlic salt, and ½ tsp black pepper in a mixing bowl. Set aside.
  3. Step 3: Combine Ingredients. Add the drained capellini to the bowl with the dressing, fold in ½ cup diced tomatoes and 3 tbsp capers. Toss gently.
  4. Step 4: Finish Salad. Sprinkle in 1 tbsp of parsley, toss gently again. Serve immediately or chill to allow flavors to meld.
