- Step 1: Cook Pasta. Bring a large pot of salted water to a boil. Add 8 oz capellini pasta and cook for about 5 minutes, or until al dente. Drain and rinse under cold water.
- Step 2: Prepare Dressing. Whisk together the juice of 2 medium lemons, 1 tsp lemon zest, 3 tbsp olive oil, 1 ½ tsp garlic salt, and ½ tsp black pepper in a mixing bowl. Set aside.
- Step 3: Combine Ingredients. Add the drained capellini to the bowl with the dressing, fold in ½ cup diced tomatoes and 3 tbsp capers. Toss gently.
- Step 4: Finish Salad. Sprinkle in 1 tbsp of parsley, toss gently again. Serve immediately or chill to allow flavors to meld.
