- In a large mixing bowl, whisk together the lemon juice, lemon zest, olive oil, minced garlic, dried oregano, salt, and pepper until well combined. Add the chicken thighs, ensuring they are fully coated in the marinade. Cover and refrigerate for at least 30 minutes, or let it marinate overnight.
- Preheat your oven to 425°F (220°C).
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the marinated chicken thighs, skin-side down, and sear for 3–4 minutes until golden brown and crispy.
- Transfer the chicken thighs to a baking dish, skin-side up. Pour the remaining marinade over the thighs and add a splash of chicken broth if desired. Bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
