For the Topping
  • 1 bag Chili Cheese Fritos Use gluten-free corn chips if needed.
For the Creamy Dressing
  • 1/2 cup sour cream Greek yogurt can be a lower-fat alternative.
  • 1/4 cup mayonnaise Can use light or vegan mayonnaise as an alternative.
  • 2 tablespoons fresh lime juice Fresh is preferred; bottled can be a substitute.
  • 2 tablespoons chipotle sauce Adjust amount based on heat preference; can substitute with other hot sauces.

Method
 

Preparation Steps
  1. In a large mixing bowl, combine 4 cups of coleslaw mix, 1 can of rinsed black beans, 1 can of drained corn, and finely diced jalapeño to your heat preference. Add 1 chopped red bell pepper, 1/4 cup of sliced green onions, and 1/4 cup of chopped fresh cilantro. Mix everything thoroughly until the ingredients are evenly distributed.
  2. In a separate medium bowl, whisk together 1/2 cup of sour cream, 1/4 cup of mayonnaise, 2 tablespoons of freshly squeezed lime juice, and 2 tablespoons of chipotle sauce until smooth and creamy.
  3. Pour the creamy chipotle dressing over the prepared vegetable mixture. Gently stir with a spatula or spoon to ensure every ingredient is well-coated.
  4. Just before serving, add a generous handful of Chili Cheese Fritos on top of the salad.
  5. Scoop the Frito Cowboy Cabbage into individual bowls or a large serving dish. Serve immediately while the Fritos are still crisp.
