  • 2 large Tortillas whole wheat or gluten-free
  • 2 medium Avocados ripe
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn frozen, thawed
  • 1/2 medium Red Onion diced
  • 1 tablespoon Lime Juice freshly squeezed
  • 2 cloves Garlic freshly minced
  • 1 teaspoon Cumin
  • 1/2 teaspoon Crushed Red Pepper to taste
  • 1 tablespoon Olive Oil for cooking

Method
 

Preparation Steps
  1. In a mixing bowl, mash the ripe avocados until smooth. Mix in minced garlic, lime juice, salt, and crushed red pepper.
  2. Gently fold in drained black beans, frozen corn, diced red onion, and cilantro into the avocado mixture.
  3. Heat olive oil in a non-stick skillet over medium heat.
  4. Spread half of the avocado filling on one half of a tortilla, fold it over, and repeat with remaining tortillas.
  5. Cook the folded quesadilla in the skillet for about 3-4 minutes per side until golden brown and crispy.
  6. Remove from skillet, let them rest for a minute, then slice into wedges and serve.
