Step-by-Step Instructions for Twix Cheesecake
  1. Preheat your oven to 180ºC (355ºF). Combine all-purpose flour, powdered sugar, and salt. Add room temperature butter and mix until a crumble forms. Press into the bottom of a springform pan and poke holes with a fork. Bake for 18 minutes until golden; let cool completely.
  2. Lower the oven temperature to 160ºC (325ºF). Cream the room temperature cream cheese until smooth. Gradually add granulated sugar; mix until combined. Whisk together sour cream and cornstarch, then fold into cream cheese with vanilla and eggs. Gently fold in chopped Twix bars.
  3. Pour the cheesecake filling into the cooled crust. Place the springform pan in a larger baking dish filled with hot water. Bake for 1 hour and 20 minutes; the center should jiggle slightly. Cool inside the oven for 1 hour, then refrigerate for at least 6 hours.
  4. While cheesecake bakes, prepare the caramel by melting granulated sugar and corn syrup. Heat heavy cream separately; gradually pour into melted sugar. Stir in cold butter and a pinch of salt; cool in the refrigerator.
