Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C).
  2. Slice the zucchini lengthwise into 1/8-inch thin pieces and salt them. Let sit for 5 minutes.
  3. Bake zucchini slices for 1 minute, then pat dry with paper towels.
  4. In a bowl, combine ricotta, half of the Parmesan, basil, oregano, garlic, egg, salt, and pepper. Mix until smooth.
  5. Spread marinara sauce on the bottom of a baking dish.
  6. Take two zucchini slices, overlap slightly, spoon in filling, and roll up. Place seam-side down in baking dish.
  7. Top with more marinara and sprinkle with remaining cheeses.
  8. Bake uncovered for 25-30 minutes until cheese is bubbly and golden brown.
  9. Let rest for 5 minutes before serving.
