- Preheat your oven to 425°F (220°C).
- Slice the zucchini lengthwise into 1/8-inch thin pieces and salt them. Let sit for 5 minutes.
- Bake zucchini slices for 1 minute, then pat dry with paper towels.
- In a bowl, combine ricotta, half of the Parmesan, basil, oregano, garlic, egg, salt, and pepper. Mix until smooth.
- Spread marinara sauce on the bottom of a baking dish.
- Take two zucchini slices, overlap slightly, spoon in filling, and roll up. Place seam-side down in baking dish.
- Top with more marinara and sprinkle with remaining cheeses.
- Bake uncovered for 25-30 minutes until cheese is bubbly and golden brown.
