- In a medium bowl, combine all the dry rub ingredients, then coat the beef brisket with this rub. Allow to rest for at least 30 minutes.
- In the slow cooker, add garlic, apple cider vinegar, ketchup, brown sugar, and other spices. Stir well and nestle the brisket into the mixture.
- Set the slow cooker to low and cook for 8 to 10 hours until fork-tender.
- Transfer the brisket to a large tray, reserving the cooking liquid. Let the brisket rest.
- Pour the reserved cooking liquid into a saucepan, bring it to a gentle boil, and simmer until it thickens.
- Preheat your oven to 200°C (390°F). Drizzle olive oil over the brisket and roast it for 15 minutes, basting it with reduced sauce.
- Return the brisket to the oven for an additional 5 to 10 minutes until edges are crisp.
- Slice the brisket across the grain and serve with remaining BBQ sauce.
