Instructions
  1. Preheat your oven to 350ºF (175ºC) and grease a 9x13-inch baking pan.
  2. In a large skillet, cook the hot breakfast sausage over medium heat for 5-7 minutes until browned and cooked through. Drain excess fat.
  3. In a mixing bowl, combine the cooked sausage, slightly thawed tater tots, cheddar cheese, and mozzarella cheese.
  4. In a separate bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder until smooth.
  5. Pour the egg mixture evenly over the tater tot and sausage blend in the baking pan.
  6. Cover tightly with plastic wrap if preparing ahead and refrigerate, or proceed to bake.
  7. Bake uncovered for 60-70 minutes until eggs are fully set and top is golden brown. A toothpick inserted should come out clean.
  8. Let the casserole cool for 10 minutes before slicing.
