- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash, peel, and slice the sweet potatoes into ¼-inch rounds. Arrange them in a single layer on the prepared baking sheet.
- Drizzle with olive oil and sprinkle with salt and pepper, tossing to coat. Roast for 20–25 minutes, flipping halfway through.
- Remove from oven and top each round with a slice of brie, returning to the oven for another 5 minutes until melted.
- Sprinkle with dried cranberries and toasted pecans. Garnish with fresh herbs if desired. Serve warm.
