  • 2 tablespoons Olive Oil or avocado oil
  • to taste Salt
  • to taste Pepper
For the Topping
  • 8 ounces Brie Cheese can substitute with camembert
  • ½ cup Dried Cranberries or fresh cranberries cooked with honey
  • cup Toasted Pecans or walnuts/pistachios
  • to taste Fresh Rosemary or Thyme optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash, peel, and slice the sweet potatoes into ¼-inch rounds. Arrange them in a single layer on the prepared baking sheet.
  3. Drizzle with olive oil and sprinkle with salt and pepper, tossing to coat. Roast for 20–25 minutes, flipping halfway through.
  4. Remove from oven and top each round with a slice of brie, returning to the oven for another 5 minutes until melted.
  5. Sprinkle with dried cranberries and toasted pecans. Garnish with fresh herbs if desired. Serve warm.
