- In a small bowl, combine sweet chili sauce with sambal and mix until well blended.
- Soak wooden skewers in water for at least 30 minutes. Thread shrimp and pineapple onto the skewers.
- Coat both sides of the skewers with the sauce mixture using a pastry brush.
- Preheat your grill to medium-high heat, around 400°F (200°C).
- Grill the skewers for about 3 minutes on one side, then flip and cook for an additional 2–3 minutes.
- Carefully remove the skewers from the grill and serve garnished with chopped parsley and lime wedges.
