Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Lightly oil your 9x13 baking dish with cooking spray or olive oil.
  3. In a large bowl, combine the soy sauce, Dijon mustard, apricot preserves, dehydrated onion, kosher salt, granulated garlic, and crushed red pepper. Stir until well blended.
  4. Coat the chicken thighs generously with the apricot mixture, reserving a third of the sauce for later.
  5. Place the chicken thighs skin-side down in the prepared baking dish and bake for 20 minutes.
  6. Flip the chicken thighs over to skin-side up, spoon the remaining apricot sauce over them, and bake for an additional 25-30 minutes.
  7. Optionally, switch the oven to broil for the last 3-5 minutes for extra flavor.
  8. Remove from the oven and let the chicken rest for a few minutes before serving.
