- Preheat your oven to 425°F (220°C).
- Lightly oil your 9x13 baking dish with cooking spray or olive oil.
- In a large bowl, combine the soy sauce, Dijon mustard, apricot preserves, dehydrated onion, kosher salt, granulated garlic, and crushed red pepper. Stir until well blended.
- Coat the chicken thighs generously with the apricot mixture, reserving a third of the sauce for later.
- Place the chicken thighs skin-side down in the prepared baking dish and bake for 20 minutes.
- Flip the chicken thighs over to skin-side up, spoon the remaining apricot sauce over them, and bake for an additional 25-30 minutes.
- Optionally, switch the oven to broil for the last 3-5 minutes for extra flavor.
- Remove from the oven and let the chicken rest for a few minutes before serving.
