For the Wraps
  • 4 pieces Whole Wheat or Spinach Tortillas your choice
  • 2 cups Shredded Lettuce
  • 1 cup Diced Tomatoes
Optional Toppings
  • 1 cup Feta or Dairy-Free Cheese optional
  • to taste Ranch or Vegan Ranch Dressing optional
  • to taste Fresh Cilantro or Parsley for garnish

Method
 

Step-by-Step Instructions
  1. Drain and rinse chickpeas under cold water, pat dry. Lightly mash half for texture.
  2. In a mixing bowl, combine chickpeas, olive oil, hot sauce, garlic powder, smoked paprika, onion powder, salt, and pepper.
  3. Heat skillet and sauté the mixture for 5-7 minutes until crispy and golden brown.
  4. Warm tortillas in the skillet for 30 seconds on each side or in the oven for 5 minutes.
  5. Assemble wraps with lettuce, chickpea filling, tomatoes, and optional toppings.
  6. Roll each wrap snugly, folding in the sides first.
  7. Slice wraps in half and serve immediately with optional garnish.
