  • 1/2 cup pure maple syrup

  • 1/2 cup raisins soaked in hot water
  • 1 cup marshmallows adjust for preference
For the Topping
  • 1 cup raw pecans or walnuts

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (204°C). Toss your sweet potatoes with olive oil, ground cinnamon, and nutmeg.
  2. Spread sweet potatoes on a baking sheet and roast for 50-60 minutes until tender.
  3. Lower the oven temperature to 375°F (190°C) and grease a 9x13-inch baking dish.
  4. Combine roasted sweet potatoes, almond milk, vanilla extract, brown sugar, maple syrup, allspice, and raisins in a mixing bowl.
  5. Spoon filling into the baking dish and dot with butter and marshmallows.
  6. Combine pecans with maple syrup and distribute over the casserole.
  7. Cover with foil and bake for 15 minutes, then remove foil and bake for an additional 15 minutes.
  8. Let the casserole cool for a few minutes before serving.
