Ingredients
  

For the Casserole
  • 4 cups Organic Sweet Potatoes Peeled and cubed
  • 2 tablespoons Extra Virgin Olive Oil Can substitute with melted coconut oil
  • 1 teaspoon Ground Cinnamon Use freshly ground for best flavor
  • 1/2 teaspoon Ground Nutmeg Use freshly ground for best flavor
  • 1 cup Almond Milk Can substitute with whole milk
  • 1 teaspoon Vanilla Extract Imitation vanilla is also acceptable
  • 1/2 cup Unsalted Butter Swap for vegan butter for plant-based option
  • 1/2 cup Organic Brown Sugar Light brown sugar can substitute
  • 1/2 cup Pure Maple Syrup Agave syrup is a suitable alternative
  • 1/2 teaspoon Ground Allspice Optional
  • 1/2 cup Organic Raisins Or use dried cranberries
  • 1 cup Marshmallows Look for vegan marshmallows for plant-based version
  • 1 cup Raw Pecans Walnuts work too or leave out nuts for nut-free
For Optional Toppings
  • 2 tablespoons Maple Syrup for Pecans To create sticky topping
  • 1 cup Extra Marshmallows For added melty sweetness

Method
 

Preparation and Roasting
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss cubed sweet potatoes with olive oil, cinnamon, and nutmeg.
  3. Spread sweet potatoes in a single layer on the baking sheet and roast for 50-60 minutes.
Assembly
  1. Reduce oven temperature to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large bowl, mix roasted sweet potatoes with almond milk, vanilla extract, brown sugar, maple syrup, ground allspice, and raisins.
  3. Spread sweet potato mixture in the prepared baking dish and top with butter and marshmallows.
  4. In another bowl, toss pecans with maple syrup and sprinkle on top.
Baking
  1. Cover with foil and bake for 15 minutes, then remove foil and bake for another 15 minutes.
  2. Let cool slightly before serving.
