Preparation and Roasting
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss cubed sweet potatoes with olive oil, cinnamon, and nutmeg.
- Spread sweet potatoes in a single layer on the baking sheet and roast for 50-60 minutes.
Assembly
- Reduce oven temperature to 375°F (190°C) and grease a 9x13-inch baking dish.
- In a large bowl, mix roasted sweet potatoes with almond milk, vanilla extract, brown sugar, maple syrup, ground allspice, and raisins.
- Spread sweet potato mixture in the prepared baking dish and top with butter and marshmallows.
- In another bowl, toss pecans with maple syrup and sprinkle on top.
Baking
- Cover with foil and bake for 15 minutes, then remove foil and bake for another 15 minutes.
- Let cool slightly before serving.
