Method
 

Step‑by‑Step Instructions
  1. Preheat a non-stick skillet on medium-low heat for 3-5 minutes.
  2. Butter one side of each slice of sourdough bread generously.
  3. Layer 3-4 slices of mozzarella cheese on each slice of sourdough.
  4. Spread a thin layer of basil pesto over the mozzarella.
  5. Add another layer of mozzarella on top, then place a second slice of sourdough on top, butter-side up.
  6. Cook for about 3-4 minutes until golden brown and cheese starts to melt.
  7. Flip the sandwich carefully and cook the other side for an additional 3-4 minutes.
  8. Remove from skillet and let cool for 1 minute before slicing.
  9. Slice in half and serve warm, ideally with tomato soup or salad.
