  • 1/2 cup grated Parmesan cheese Nutritional yeast serves as a dairy-free substitute if needed.
  • 1/4 cup bacon bits Omit for a healthier version or swap with crispy chickpeas.

Equipment

  • Mixing Bowl
  • Skillet
  • Spoon
  • tongs

Method

Step-by-Step Instructions
  1. In a mixing bowl, combine ground chicken with garlic powder, salt, and black pepper. Mix well until the seasonings are evenly distributed throughout the meat. Set aside for a few minutes to let the flavors meld together.
  2. Take the small flour tortillas and place them on a clean surface. Spread a thin layer of the seasoned chicken mixture onto the back of each tortilla, pressing down firmly to ensure the chicken sticks.
  3. Heat a large skillet over medium-high heat and add a drizzle of avocado oil. Allow the oil to warm for 1-2 minutes until shimmering.
  4. Carefully place the prepared tortillas, chicken side down, into the hot skillet. Cook for about 2-3 minutes without disturbing them.
  5. Using tongs, gently flip the tortillas to crisp the other side. Cook for an additional 2 minutes, watching closely for a nice golden color.
  6. Remove the tacos from the skillet and place them on a serving plate. Top each taco with fresh romaine lettuce, Caesar dressing, and grated Parmesan cheese. Add bacon bits or other toppings as desired.
  7. Fold each taco in half and serve immediately, with extra Caesar dressing on the side for dipping.
