Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and coat a 13x9 inch baking dish with non-stick spray.
  2. In a large skillet, brown the ground beef for about 5-7 minutes, then add chopped onion and cook until soft, about 3-4 minutes.
  3. Stir in taco seasoning and water, bringing the mixture to a gentle boil for 1-2 minutes.
  4. Reduce heat and stir in black beans, diced tomatoes, and sour cream, cooking for 8-10 minutes.
  5. In the baking dish, create your first layer with half of the Fritos, followed by half of the shredded cheese. Layer the beef mixture on top.
  6. Sprinkle remaining cheese on top and cover with aluminum foil.
  7. Bake for 15 minutes, then remove foil and bake for an additional 5 minutes until cheese is bubbly.
