- In a large skillet, heat olive oil over medium-high heat and cook cubed chicken until browned and cooked through, about 5–7 minutes.
- Whisk together soy sauce, water, brown sugar, rice vinegar, sesame oil (if using), ginger, garlic, and cornstarch in a bowl to create the teriyaki sauce.
- Pour the teriyaki sauce over cooked chicken in the skillet, stirring gently and cook for another 2–3 minutes until sauce thickens slightly.
- Prepare rice according to package instructions. Once the teriyaki chicken is ready, spoon it generously over the warm rice.
