For the Street Corn Salad
  • 2 cups Corn kernels fresh, frozen, or canned
  • 1/4 cup Mayonnaise for creaminess

  • 1/4 cup Fresh cilantro chopped
For the Bowl
  • 2 cups Cooked rice white or brown rice
  • 1 can Black beans for fiber and protein
  • 1 piece Avocado sliced

Method
 

Cooking Instructions
  1. Cook the rice according to package instructions. Usually involves boiling water, adding rice, covering, and simmering for 15-20 minutes.
  2. Pat the chicken dry and season with chili powder, cumin, garlic powder, paprika, salt, and pepper.
  3. In a skillet, heat olive oil over medium-high heat and cook the chicken for 3-4 minutes on each side until cooked through.
  4. Char the corn in the same skillet for 2-5 minutes until golden brown.
  5. Combine charred corn with mayonnaise, cotija cheese, lime juice, chili powder, and cilantro. Mix well.
  6. Assemble the bowls by layering rice, then black beans, chicken, and street corn mixture, topped with avocado slices.
