- Preheat the oven to 400°F (200°C). Gather all ingredients and equipment.
- In a large mixing bowl, toss the chicken breasts with olive oil, salt, pepper, garlic powder, and paprika.
- Spread the seasoned chicken breasts on the sheet pan. Add mixed vegetables around the chicken.
- Bake in the preheated oven for 20-25 minutes until the chicken reaches 165°F (74°C) and vegetables are tender.
- While baking, mix Greek yogurt, ranch seasoning, and chopped herbs in a bowl.
- During the last 5 minutes, warm the pitas in the oven.
- Remove from oven, let chicken rest for 3-5 minutes, slice it, and stuff into pitas with veggies and dressing.
