Method
 

Step-by-Step Instructions
  1. Finely chop the scallions, separating the green and white parts, and set them aside.
  2. In a small bowl, combine the light soy sauce, dark soy sauce, and sugar. Stir until the sugar dissolves.
  3. In a medium-sized pan, heat about 2-3 tablespoons of cooking oil over medium heat until shimmering.
  4. Add the white parts of the chopped scallions to the hot oil. Sauté for 1-2 minutes until fragrant and slightly crispy.
  5. Carefully pour the hot oil and sautéed scallions over the pre-mixed sauce in the bowl. Stir to combine.
  6. Bring a pot of water to a rolling boil, then add the wheat noodles. Cook according to package instructions, usually 4-6 minutes.
  7. Drain the noodles and combine them in a bowl with the scallion oil sauce. Toss well to coat.
  8. Serve the noodles and garnish with the green parts of the fried scallions.
