- Preheat your oven to 400°F or prepare a grill on high heat.
- Slice the fresh baguette into ½-inch thick pieces and set aside.
- In a small bowl, combine softened butter with half of the minced garlic and a pinch of salt. Spread this mixture on both sides of each baguette slice.
- Toast the baguette slices in the preheated oven for about 10-12 minutes or until golden brown and crispy.
- While the bread toasts, chop the ripe peaches and tomatoes, then mix with the remaining garlic, olive oil, lemon juice, salt, and pepper.
- In a food processor, whip the ricotta cheese until smooth and creamy, then transfer to a serving bowl.
- Once toasted, spread whipped ricotta on each baguette slice and top with the peach and tomato mixture.
- Garnish with fresh basil leaves and serve immediately.
