  • 1 loaf Baguette Fresh and firm, sliced into ½-inch pieces
  • 2 tablespoons Butter Softened; can substitute with olive oil
For the Topping
  • 2 cloves Garlic Minced; fresh works best
  • 2 large Peaches Ripe yellow peaches, chopped
  • 1 cup Tomatoes Ripe heirloom or cherry tomatoes, chopped
  • 2 tablespoons Olive Oil Can substitute with avocado oil
  • 1 tablespoon Lemon Juice Fresh
  • ¼ cup Fresh Basil Chopped; can substitute with mint
  • to taste Salt Flaky sea salt recommended
  • to taste Pepper
For the Cream
  • 1 cup Ricotta Cheese Whipped; drain for less moisture

Method
 

Directions
  1. Preheat your oven to 400°F or prepare a grill on high heat.
  2. Slice the fresh baguette into ½-inch thick pieces and set aside.
  3. In a small bowl, combine softened butter with half of the minced garlic and a pinch of salt. Spread this mixture on both sides of each baguette slice.
  4. Toast the baguette slices in the preheated oven for about 10-12 minutes or until golden brown and crispy.
  5. While the bread toasts, chop the ripe peaches and tomatoes, then mix with the remaining garlic, olive oil, lemon juice, salt, and pepper.
  6. In a food processor, whip the ricotta cheese until smooth and creamy, then transfer to a serving bowl.
  7. Once toasted, spread whipped ricotta on each baguette slice and top with the peach and tomato mixture.
  8. Garnish with fresh basil leaves and serve immediately.
