  • 2 pounds Ground Beef or ground turkey for a lighter option
  • 1 cup Breadcrumbs or gluten-free breadcrumbs/almond flour
  • 1 Egg acts as a binder
  • 1/2 cup Milk for moisture
  • 2 tablespoons Worcestershire Sauce
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
For the Vegetables
  • 1 large Green Bell Pepper diced and sautéed
  • 1 large Onion diced and sautéed
  • 2 tablespoons Olive Oil for sautéing
For the Cheese
  • 8 slices Provolone Cheese or mozzarella/swiss
  • 2 tablespoons Fresh Parsley optional garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a medium skillet, heat olive oil over medium heat and sauté diced green bell pepper and onion for about 5 minutes.
  3. In a large mixing bowl, combine ground beef, breadcrumbs, egg, milk, Worcestershire sauce, garlic powder, salt, and black pepper.
  4. Take half of the meat mixture and press it firmly into the bottom of a loaf pan.
  5. Layer 4 slices of provolone cheese over the meat mixture, then spoon sautéed green pepper and onion over the cheese.
  6. Cover with the remaining meat mixture, sealing the edges.
  7. Bake in the preheated oven for 45 to 50 minutes.
  8. In the last 5 minutes, add 4 more slices of provolone cheese on top.
  9. Let the meatloaf rest for 5 to 10 minutes before serving; garnish with fresh parsley if desired.
