Marinating and Browning
- Marinate the chicken for at least 30 minutes with onions, garlic, ginger, soy sauce, and spices.
- Brown the marinated chicken in oil over medium heat for 5-7 minutes on each side until golden.
Preparing the Stew
- Sauté remaining onions, garlic, and spices in the same pot for 3-4 minutes.
- Combine browned chicken with enough stock to cover, add vegetables and bring to a simmer.
- Cover and braise on low heat for 1.5 to 2 hours, stirring occasionally.
- Adjust seasoning if necessary before serving.
