Ingredients
  

For the Chicken
  • 3 lbs Chicken (bone-in, skinless) Skin-on is optional for added richness.
For the Stew Base
  • 4 cups Water/Stock Chicken stock deepens flavor.
  • 1 large Onion Chopped.
  • 4 cloves Garlic Minced.
  • 1 tbsp Ginger Grated.
For the Vegetables and Herbs
  • 2 medium Bell peppers Any variety.
  • 1 tbsp Thyme Fresh.
  • 1 pcs Scotch bonnet pepper Use according to heat preference.
For Seasoning
  • 1 tbsp Paprika
  • 1 tbsp Soy sauce Low-sodium preferred.
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tbsp Brown sugar

Method
 

Marinating and Browning
  1. Marinate the chicken for at least 30 minutes with onions, garlic, ginger, soy sauce, and spices.
  2. Brown the marinated chicken in oil over medium heat for 5-7 minutes on each side until golden.
Preparing the Stew
  1. Sauté remaining onions, garlic, and spices in the same pot for 3-4 minutes.
  2. Combine browned chicken with enough stock to cover, add vegetables and bring to a simmer.
  3. Cover and braise on low heat for 1.5 to 2 hours, stirring occasionally.
  4. Adjust seasoning if necessary before serving.
Serving
  1. Serve the chicken with gravy over rice and peas or fried plantains.
