- Cut the chicken breasts into 1-inch cubes and season with salt, pepper, garlic powder, paprika, onion powder, and red pepper flakes.
- Preheat the oven to 400°F (200°C) and place bacon on a baking sheet lined with parchment paper. Bake for 25 minutes or until crispy.
- Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken and sear for 3-4 minutes until golden brown. Flip and cook for another 2-3 minutes until cooked through.
- Pour garlic parmesan sauce over chicken and sprinkle with parmesan cheese. Stir to coat and allow cheese to melt slightly.
- Transfer skillet to the oven and bake for 10-15 minutes until chicken reaches 165°F and cheese is bubbly.
- Spread softened butter on the insides of brioche buns and toast them in a skillet until golden brown.
- Assemble sandwiches by adding the garlic parmesan chicken to each toasted bun, topping with bacon and parsley. Serve warm.
