Step-by-Step Instructions
  1. Cook the rice according to package instructions, rinsing under cold water beforehand. Set aside after cooking.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering.
  3. Add seasoned chicken breast to the skillet and cook for about 5-7 minutes until golden brown. Transfer to a cutting board to rest.
  4. In the same skillet, stir-fry sliced bell peppers and onions for 3-5 minutes until tender-crisp.
  5. Return sliced chicken to the skillet, toss with the vegetables, and cook for an additional minute.
  6. Spoon the chicken and vegetable mixture over the prepared rice.
  7. Top with shredded cheese, Greek yogurt, and salsa or other toppings as desired.
