Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry until it’s about 1/8 inch thick and cut into rectangles, about 4 inches by 6 inches.
  3. In a mixing bowl, whisk together the eggs, then stir in cheese, bacon, onions, and herbs with a pinch of salt and pepper.
  4. On one half of each pastry rectangle, place a generous spoonful of the filling, leaving a border around the edges.
  5. Fold the unfilled half over the filling and crimp the edges with a fork to seal.
  6. Brush the tops with beaten egg and sprinkle with sesame seeds if desired.
  7. Bake for 18-22 minutes until golden brown and puffed.
  8. Let cool for about 5 minutes before serving warm.
