Prepare Chicken Patties
- In a large mixing bowl, combine the ground chicken with chipotle peppers, adobo sauce, smoked paprika, ground cumin, garlic powder, onion powder, salt, pepper, lime juice, breadcrumbs, and egg. Mix until just combined.
Shape Patties
- Divide the mixture into four portions and form each into a patty.
Cook Patties
- Preheat grill or skillet to medium heat. Cook patties for 5-7 minutes each side, until golden brown and internal temperature reaches 165°F.
Make Chipotle Mayo
- In a bowl, whisk together mayonnaise, chopped chipotle, lime juice, garlic powder, and a pinch of salt. Adjust seasoning to taste.
Assemble Burgers
- Toast burger buns and spread chipotle mayo on the bottom. Add lettuce, chicken patty, tomato, onion, jalapeños, and top with the bun.
