Step‑by‑Step Instructions for Chicken Fajita Casserole
- Preheat your oven to 350°F (175°C).
- Heat 2 tablespoons of olive oil in a large ovenproof skillet over medium heat. Add chicken pieces and sauté for 6-8 minutes until golden brown and cooked through. Remove and set aside.
- In the same skillet, add sliced onion and bell peppers. Sauté for 5-7 minutes until soft and slightly caramelized.
- Return chicken to the skillet, add fajita seasoning mix, sour cream, and cream cheese. Stir until well combined.
- Sprinkle 2 cups of grated cheddar cheese over the mixture. Transfer to the oven and bake for 10-15 minutes until cheese is melted and bubbly.
- Remove from oven and let it rest for a few minutes. Slice and serve warm, optionally topped with avocado or salsa.
