  • 8 oz elbow or rotini pasta can substitute with gluten-free pasta
For the Salad
  • 2 cups corn fresh or canned; frozen corn works
  • 1/2 cup red onion diced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup cilantro chopped; omit if desired
  • 1/2 cup cotija cheese crumbled; feta cheese is a substitute
For the Dressing
  • 1/4 cup mayonnaise Greek yogurt can be used for a healthier option
  • 2 tbsp lime juice adjust for taste
  • 1 tsp chili powder adjust for spice level
  • salt and pepper to taste

Method
 

Instructions
  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cold water. Set aside in a large bowl.
  2. Prepare the Vegetables: Chop red onion and halve cherry tomatoes. Add to the bowl with cooled pasta.
  3. Make the Dressing: Whisk together mayonnaise, lime juice, chili powder, salt, and pepper in a separate bowl until smooth.
  4. Combine All Ingredients: Add corn and diced vegetables to the pasta. Crumble cotija cheese on top and mix evenly.
  5. Add the Dressing: Pour dressing over salad and toss gently to coat.
  6. Chill Before Serving: Cover and refrigerate for at least 30 minutes before serving.
