Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
  2. In a large skillet, heat a splash of olive oil over medium heat and sauté the finely chopped onion until translucent.
  3. Add minced garlic and cook for another minute until fragrant. Then, stir in ground chicken and taco seasoning, cooking until chicken is fully cooked, about 6–8 minutes.
  4. Assemble your mini taco shells on the prepared baking sheet and fill each with the chicken mixture and shredded cheese.
  5. Bake for approximately 10–12 minutes until cheese is melted and the taco shells are golden brown.
  6. After removing from the oven, let cool briefly and then top with fresh cilantro and any optional toppings before serving.
