- Preheat your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
- In a large skillet, heat a splash of olive oil over medium heat and sauté the finely chopped onion until translucent.
- Add minced garlic and cook for another minute until fragrant. Then, stir in ground chicken and taco seasoning, cooking until chicken is fully cooked, about 6–8 minutes.
- Assemble your mini taco shells on the prepared baking sheet and fill each with the chicken mixture and shredded cheese.
- Bake for approximately 10–12 minutes until cheese is melted and the taco shells are golden brown.
- After removing from the oven, let cool briefly and then top with fresh cilantro and any optional toppings before serving.
