  • 1/2 cup creamy peanut butter or almond butter/sunflower seed butter for nut-free
  • 1/4 cup soy sauce gluten-free if needed
  • 2 tablespoons honey or maple syrup for vegan
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 tablespoon sesame oil or olive oil
  • 1 teaspoon minced garlic fresh preferred, garlic powder okay
  • 1 teaspoon grated ginger or ground ginger
For the Wraps
  • 2 cups cooked chicken or tofu/chickpeas for vegetarian
  • 4 large lettuce leaves romaine or butter lettuce preferred
  • 1 cup shredded carrots or sliced bell peppers
  • 1 cup sliced bell peppers or zucchini/cucumber for freshness
  • 1/2 cup chopped fresh cilantro or parsley if desired
  • 1/4 cup chopped peanuts optional, can use seeds for nut-free

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine peanut butter, soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Whisk until smooth.
  2. In a large bowl, coat the cooked chicken with half of the peanut sauce until fully covered.
  3. Lay out the lettuce leaves and add a generous spoonful of the chicken mixture to each leaf.
  4. Top with shredded carrots, sliced bell peppers, and chopped cilantro. Drizzle with more peanut sauce if desired.
  5. Fold the sides of the lettuce leaves over the filling and roll tightly from bottom to top. Serve immediately.
