  • 1/2 cup mayonnaise or Greek yogurt for a lighter option
  • 1/4 cup chili sauce adjust to taste
  • 2 tbsp soy sauce use tamari for gluten-free option
  • 2 tbsp honey or maple syrup for vegan option
  • 1 tbsp lime juice freshly squeezed preferred
For Cooking
  • 2 tbsp oil olive oil or canola oil
For Serving
  • 4 cups rice or noodles any grain or noodle of choice works
  • 3 scallions green onions freshly chopped for garnish

Method
 

Prep and Cook
  1. Gather your ingredients and chop the chicken into bite-sized pieces.
  2. Heat a large skillet over medium-high heat with a splash of oil. Add the chicken pieces and sauté for 7 to 10 minutes until golden brown.
  3. While chicken is cooking, mix mayonnaise, chili sauce, soy sauce, honey, and lime juice in a bowl until well blended.
  4. Pour the sauce over cooked chicken, stir to coat, and reduce heat to low. Let simmer for 2 to 3 minutes.
  5. Serve over rice or noodles, top with chicken mixture, and garnish with green onions.
