Step-by-Step Instructions
  1. Rinse chickpeas and black beans under cold water for about 30 seconds. Transfer to a mixing bowl.
  2. Whisk together olive oil, vinegar, oregano, salt and pepper in a bowl until emulsified.
  3. Pour the dressing over beans and gently toss to coat without mashing.
  4. Add sliced onion, crumbled feta, and chopped parsley, then gently mix again.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Serve chilled and enjoy with whole grain pita or as a side dish.
