  • 1 onion sliced
  • 1 carrot sliced
  • 1 cup broccoli fresh or frozen
  • 2 cloves garlic minced
  • 1 tablespoon ginger grated
For the Sauce
  • 1 cup chicken broth or vegetable broth
  • 1/4 cup soy sauce or tamari for gluten-free
  • 2 tablespoons sesame oil
  • 2 tablespoons dry sherry optional
  • 1 tablespoon honey or agave syrup for vegan
  • 2 tablespoons rice vinegar or lemon juice
  • 1 tablespoon cornstarch or arrowroot powder
  • 1 tablespoon oil for cooking (vegetable or sesame)

Method
 

Step-by-Step Instructions for Chicken Stir-Fry
  1. In a medium bowl, whisk together chicken broth, soy sauce, sesame oil, dry sherry, honey, rice vinegar, and cornstarch until smooth. Set aside.
  2. Heat oil in a large skillet over medium-high heat. Add diced chicken breast and season with salt and pepper. Stir-fry for 4-5 minutes until cooked through. Remove chicken and set aside.
  3. In the same skillet, add more oil and sauté bell pepper, onion, carrot, and broccoli for 3-4 minutes until tender-crisp.
  4. Return chicken to the skillet with vegetables. Add garlic and ginger, stirring for 30 seconds until fragrant.
  5. Pour the prepared sauce over the chicken and vegetables, stirring constantly for 2-3 minutes until the sauce thickens.
  6. Garnish with sesame seeds and chopped green onions. Serve over rice or noodles.
