- Feed your active sourdough starter by combining it with lukewarm filtered water and all-purpose flour. Let it rise for 6-12 hours.
- Prepare the dough by adding activated starter, water, and pumpkin puree to a mixing bowl. Mix in bread flour and salt until combined.
- Perform the first stretch and fold, then let the dough rest for 1 hour.
- Optionally, perform a second stretch and fold and let it rest for another hour.
- Do a final stretch and fold before covering and placing the dough in a warm spot overnight.
- In the morning, optionally do a second stretch and fold before shaping the dough.
- Shape the dough, optionally sprinkle with pumpkin spice filling and refrigerate for 8-30 hours.
- Preheat oven to 475°F (245°C). Score the dough and prepare for baking.
- Bake covered for 55 minutes, then uncover and bake for an additional 5 minutes. Cool on a wire rack.
