  5. Do a final stretch and fold before covering and placing the dough in a warm spot overnight.
  6. In the morning, optionally do a second stretch and fold before shaping the dough.
  7. Shape the dough, optionally sprinkle with pumpkin spice filling and refrigerate for 8-30 hours.
  8. Preheat oven to 475°F (245°C). Score the dough and prepare for baking.
  9. Bake covered for 55 minutes, then uncover and bake for an additional 5 minutes. Cool on a wire rack.
