- Preheat your oven to 350°F (175°C) and prepare an 11-inch loaf pan with parchment paper for easy removal.
- Peel and slice fresh peaches to about 1-inch thick. Blanch them if too firm to facilitate peeling.
- Cream together softened butter, granulated sugar, salt, and vanilla extract until light and fluffy. Add eggs one at a time and mix well. Gradually incorporate flour until just combined.
- Pour the batter into the loaf pan and fold in half of the peach slices. Arrange remaining slices on top.
- Combine melted butter, brown sugar, vanilla, and flour in a small bowl until smooth. Drop bits of this mixture over the peach slices.
- Bake in the preheated oven for about 1 hour until golden brown and springs back upon touch.
- Let the cake cool in the pan for 20 minutes before transferring to a cooling rack to cool completely.
