Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare an 11-inch loaf pan with parchment paper for easy removal.
  2. Peel and slice fresh peaches to about 1-inch thick. Blanch them if too firm to facilitate peeling.
  3. Cream together softened butter, granulated sugar, salt, and vanilla extract until light and fluffy. Add eggs one at a time and mix well. Gradually incorporate flour until just combined.
  4. Pour the batter into the loaf pan and fold in half of the peach slices. Arrange remaining slices on top.
  5. Combine melted butter, brown sugar, vanilla, and flour in a small bowl until smooth. Drop bits of this mixture over the peach slices.
  6. Bake in the preheated oven for about 1 hour until golden brown and springs back upon touch.
  7. Let the cake cool in the pan for 20 minutes before transferring to a cooling rack to cool completely.
