  • 1 teaspoon cumin
  • 1 teaspoon paprika

Preparation Steps
  1. Dice 1 pound of chicken and chop 1-2 bell peppers, then set aside.
  2. In a large pot, heat 1-2 tablespoons of olive oil over medium-high heat. Add chicken and cook for 5-7 minutes until golden brown. Stir in bell peppers and sauté for another 3-4 minutes.
  3. Stir in 1 cup of uncooked rice, 1 teaspoon of cumin, and 1 teaspoon of paprika. Coat thoroughly for 1-2 minutes.
  4. Pour in 2 cups of chicken broth, bring to a boil, then reduce heat to low and cover. Simmer for 20 minutes until rice is tender.
  5. Remove from heat, stir in 1 to 1.5 cups of cheese until melted. Adjust seasoning to taste.
