Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Add 1 pound of diced chicken and cook for about 5-7 minutes until golden brown.
  2. Reduce heat to medium and stir in 3 cloves of minced garlic. Sauté for 1-2 minutes until fragrant.
  3. Add 1 cup of orzo pasta, 2 teaspoons of Cajun seasoning, and 2 cups of heavy cream. Stir to combine all ingredients.
  4. Bring mixture to a gentle simmer, cover, and cook for about 15 minutes, stirring occasionally until orzo is tender.
  5. Remove from heat and stir in 1/2 cup of grated Parmesan cheese until melted. Adjust seasoning with salt and pepper.
  6. Let cool for a couple of minutes, serve in bowls, and garnish with additional Parmesan and parsley if desired.
