- In a large skillet over medium heat, heat a drizzle of oil. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear the chicken for about 5 minutes on each side until golden brown.
- In a small bowl, whisk together BBQ sauce and honey. Pour the mixture over the chicken in the skillet, coating evenly and allowing it to bubble and create a glaze.
- Add rice and chicken broth to the skillet, gently stirring to combine. Ensure the rice is well distributed under the chicken.
- Bring the mixture to a simmer, cover with a lid, and reduce heat to low. Cook for about 20 minutes or until the rice is tender.
- In the last 5 minutes, uncover and sprinkle mixed vegetables over the rice. Cover again to steam the veggies quickly.
- Once cooked, remove from heat and let sit for 5 minutes before fluffing the rice and serving.
