  • 1 pound Chicken (thighs or breasts) Can substitute with pork or tofu.
  • 1 teaspoon Garlic Powder Can use fresh garlic.
  • 1 teaspoon Onion Powder Fresh onions can be used.
  • 1 teaspoon Smoked Paprika Use regular paprika if needed.
  • to taste Salt
  • to taste Pepper
For the Sauce
  • 1 cup BBQ Sauce Homemade or store-bought.
  • 2 tablespoons Honey Can substitute with maple syrup.
For the Base
  • 1 cup Rice Long-grain or basmati preferred.
  • 1 cup Chicken Broth Vegetable broth for vegetarian version.
For the Vegetables
  • 2 cups Mixed Vegetables Any vegetables you have will work.

Instructions
  1. In a large skillet over medium heat, heat a drizzle of oil. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear the chicken for about 5 minutes on each side until golden brown.
  2. In a small bowl, whisk together BBQ sauce and honey. Pour the mixture over the chicken in the skillet, coating evenly and allowing it to bubble and create a glaze.
  3. Add rice and chicken broth to the skillet, gently stirring to combine. Ensure the rice is well distributed under the chicken.
  4. Bring the mixture to a simmer, cover with a lid, and reduce heat to low. Cook for about 20 minutes or until the rice is tender.
  5. In the last 5 minutes, uncover and sprinkle mixed vegetables over the rice. Cover again to steam the veggies quickly.
  6. Once cooked, remove from heat and let sit for 5 minutes before fluffing the rice and serving.
