Method
 

Step-by-Step Instructions
  1. In a large bowl, combine the chicken with salt, black pepper, paprika, curry powder, thyme, and chopped onion. Marinate for at least 30 minutes.
  2. In a deep pot, heat vegetable oil over medium-high heat. Sear marinated chicken for about 5-7 minutes on each side until golden brown.
  3. In a blender, combine Roma tomatoes, red bell pepper, small red onion, and scotch bonnet peppers. Blend until smooth.
  4. In the same pot, add tomato paste over medium heat and fry for about 2 minutes.
  5. Pour the blended pepper mixture into the pot. Cook for 10 minutes.
  6. Add garlic powder, ginger powder, and bouillon cube to the sauce, stirring to dissolve.
  7. Return seared chicken to the pot, cover, and simmer for 25-30 minutes.
