Step-by-Step Instructions
  1. In a small mixing bowl, crack the large eggs and add the egg white, water, kosher salt, and black pepper. Whisk for 1-2 minutes until smooth and frothy.
  2. Place a medium nonstick skillet over medium heat and drizzle in about a tablespoon of olive oil. Heat for 1-2 minutes until shimmering.
  3. Add finely chopped onions and sauté for 3-4 minutes until tender and translucent.
  4. Add thinly sliced mushrooms and cook for another 3-4 minutes until tender and browned.
  5. Sprinkle in fresh baby spinach and stir, cooking for about 1 minute until wilted.
  6. Pour the whisked egg mixture over the sautéed vegetables. Stir continuously for 2-3 minutes until cooked through.
