For the Marinade
  • 1/2 cup Brown sugar Or white sugar in a pinch
  • 1/4 cup Soy sauce Tamari or coconut aminos for gluten-free
  • 3 cloves Garlic, minced Or garlic powder as a substitute
  • 1 tbsp Ginger, fresh grated Ground ginger works but fresh is better
For Cooking
  • 2 tbsp Olive oil Or any neutral oil
  • 1/2 tsp Chili flakes Optional, adjust for heat
  • 2 tbsp Lime juice Or lemon juice as an alternative
  • To taste Salt and pepper Essential seasonings
For Garnish
  • 1/4 cup Fresh cilantro Optional for garnish

Method
 

Marinating and Cooking
  1. In a medium bowl, mix together brown sugar, soy sauce, minced garlic, grated ginger, lime juice, and olive oil. Add chicken, coat thoroughly, and marinate for at least 30 minutes, up to 2 hours.
  2. Preheat the oven to 400°F (200°C) if baking. Lightly grease a baking dish with olive oil.
  3. Place the marinated chicken in the baking dish, ensuring space between pieces. Bake for 25-30 minutes, turning halfway, until cooked through (internal temperature of 165°F/75°C).
  4. For grilling, preheat grill to medium-high. Grill chicken for 6-8 minutes each side until cooked and slightly charred.
  5. For slow cooking, place marinated chicken in the slow cooker and cook on low for 4-6 hours or high for 2-3 hours until fork-tender.
  6. Garnish with chopped cilantro and serve with rice or quinoa.
