Marinating and Cooking
- In a medium bowl, mix together brown sugar, soy sauce, minced garlic, grated ginger, lime juice, and olive oil. Add chicken, coat thoroughly, and marinate for at least 30 minutes, up to 2 hours.
- Preheat the oven to 400°F (200°C) if baking. Lightly grease a baking dish with olive oil.
- Place the marinated chicken in the baking dish, ensuring space between pieces. Bake for 25-30 minutes, turning halfway, until cooked through (internal temperature of 165°F/75°C).
- For grilling, preheat grill to medium-high. Grill chicken for 6-8 minutes each side until cooked and slightly charred.
- For slow cooking, place marinated chicken in the slow cooker and cook on low for 4-6 hours or high for 2-3 hours until fork-tender.
- Garnish with chopped cilantro and serve with rice or quinoa.
