Preparation Steps
  1. Preheat your oven to 350°F (175°C). Prepare a 9x13 inch pan by lining it with foil or parchment paper and spraying it with non-stick spray.
  2. Chop the unsweetened baking chocolate and combine it with butter in a microwave-safe bowl. Heat in 30-second intervals until melted and smooth, about 1-2 minutes.
  3. In a mixing bowl, combine eggs, sugar, and vanilla extract. Beat until light and fluffy, about 2 minutes.
  4. Slowly drizzle the melted chocolate and butter mixture into the egg mixture, mixing well. Gradually add flour and baking powder, mixing on low speed until combined.
  5. Pour the brownie batter into the prepared pan and bake for 20-30 minutes until a toothpick comes out mostly clean. Allow to cool completely.
  6. For the frosting, beat together powdered sugar, peppermint extract, and milk until smooth. Spread evenly over cooled brownies.
