Step-by-Step Instructions
- In a medium mixing bowl, combine 8 oz of softened goat cheese and 4 oz of cream cheese, mixing for about 2-3 minutes until smooth and creamy.
- Gently fold in 1 tablespoon of honey into the cheese mixture using a spatula for about 1 minute.
- On a separate plate, combine 1/2 cup of chopped crispy bacon, 1/4 cup of chopped pecans, 1/4 cup of chopped dried cranberries, and 1 tablespoon of minced fresh rosemary.
- Lay a large piece of plastic wrap on a clean surface, spoon the cheese mixture onto the center, and mold it into a log shape.
- Carefully unwrap the cheese log and roll it in the bacon mixture, pressing gently for an even coating.
- Transfer the coated log onto a serving platter, garnish with 1 cup of arugula, and chill for at least 30 minutes.
- Once chilled, slice the log and serve with a selection of crunchy crackers or crostini.
