  • 2 slices Sourdough Bread Fresh sandwich loaf
  • 4 ounces Mozzarella Cheese Pat dry before use
  • 3 tablespoons Basil Pesto Homemade or store-bought
  • 2 tablespoons Sun-Dried Tomatoes Optional
  • 2 slices Bacon Optional for vegetarian
  • 2 tablespoons Butter For crust

Step-by-Step Instructions
  1. Start by laying out two slices of fresh sourdough bread in a non-heated skillet. Generously butter one side of each slice.
  2. Flip one slice of the buttered sourdough over. Layer with a thick slice of mozzarella cheese and a spread of basil pesto. Add sun-dried tomatoes or bacon if using.
  3. Place the second slice of sourdough on top, buttered side up. Press down gently.
  4. Turn the heat on to medium-low and cook for 3-4 minutes, pressing gently.
  5. Flip the sandwich carefully and cook for another 3-4 minutes until golden brown.
  6. Remove from skillet, cool slightly, slice in half, and serve warm.
