- Start by laying out two slices of fresh sourdough bread in a non-heated skillet. Generously butter one side of each slice.
- Flip one slice of the buttered sourdough over. Layer with a thick slice of mozzarella cheese and a spread of basil pesto. Add sun-dried tomatoes or bacon if using.
- Place the second slice of sourdough on top, buttered side up. Press down gently.
- Turn the heat on to medium-low and cook for 3-4 minutes, pressing gently.
- Flip the sandwich carefully and cook for another 3-4 minutes until golden brown.
- Remove from skillet, cool slightly, slice in half, and serve warm.
